 Crock-pot, braising Method

The crock-pot  requires 3-4 hours, on high, and you can even cook a frozen chicken without thawing and on low if you have 8-10 hours.  

Even with the Crock-pot approach, remember to let you meat cool before cutting so the meat stays juicy in case you want to put some away for later use. Once you have the chicken in the fridge, there are many quick meal solutions such as pasta, so many rice dishes, stir fries etc.

As you enjoy the delicious, flavorful, tender, pasture raised chicken, make sure you save those bones! Bones can be frozen  and used later for broth soup.

  • Whole chicken.  4 to 5 pounds, but whatever you get, just make sure it will fit in your Dutch oven with the lid on.
  • Butter and oil. Use a combination here, as the butter adds flavor and the oil keeps the butter from burning.
  • Lemon. You'll need 2 l

  • Lemon. You'll need 2 lemons for their peels.
  • Whole milk. This is the foundation of the sauce, so stick with whole milk for its richness.
  • Sage. This fresh herb adds an herby depth of flavor and will make your whole kitchen smell nice and cozy. You could change to thyme sprigs instead.

 

  1. Sear the chicken. Get a dark sear all over the chicken and use a combination of butter and oil. Use a Dutch oven or pot big enough to hold the chicken with the lid closed.
  2. Add the milk and aromatics. Move the chicken to a plate and pour out the grease. Pour in whole milk and add thelemon,, garlic cloves, and fresh sage sprigs.
  3. Bake the chicken covered. Return the chicken to the pot. Cover and bake in a 375ºF oven for 45 minutes.
  4. Bake the chicken uncovered. Uncover and bake until the chicken is cooked through. This will let the sauce reduce a little and the top of the chicken brown more.
  5. Serve with sauce. Transfer the chicken to a cutting board. Serve the sauce as is
